I made some duck/goose breakfast sausage out of mine today.
I ground Pork shoulder and salt pork 1 1/4 pounds to 5 pounds of duck/goose.
Mustard powder, Fennel, dill weed, parsley, brown sugar, Mrs. dash, sage, Thyme, Black pepper, onion powder, 3 garlic cloves, red pepper flakes, frozen hot-ish peppers, a 1/4 teaspoon liquid smoke. and Crazens chopped. 
I mixed it very well, and fried it WELL in bacon grease. Surprisingly eatable.
When I cook I seldom measure anything but the Base ingredient. If you like it add a lot, If not don't add as much.
I was winging this from the top, I'm glad it does not taste like duck but...
What would you change if anything?

I like duck, but after 40+ years of hunting and eating goose...forget goose!

fried in bacon grease....cardboard tastes great.  you got the right ingredients.  I do like duck breast just baked.
