I'm baby sitting some stainlessteel guns. what is a good cleaner for removing carb/stains???

Fine scotch brite pad and some WD-40. Gotta work with the grain of the metal or fine scratches will show from the pad. Nice thing is you can buff them out as well. Cheap SS barrels are the worst. Polished high end numbers though require some rouge and a Dremel. Do them enough and it's not a big deal, first couple times though you will scratch your head as it's a new concept to you. Some folks like rust off as well which also removes blood stains quite efficiently enough to even pass a luminol test. May be surprised at how well just a little oil on a pad will take off the majority. I don't break out a pad unless it's seriously fubar'd!

Dillon Precision sells a product called EZ Brite Wonder Cloth. Its similar to the Lead away Cloths. Either one of these have worked well for my Stainless Smith&Wessons and one Remington 700.

Lotsa different SS cleaners out there. I have even tried citrus brite on my SS grill. Problem with all the cleaners is you should try them on a spot out of the way, like inside of floorplate or under barrel first to see if it discolors or stains the SS. Different grades behave differently.
