Spot;

I've taken to using a Buck Vanguard with guthook for most of the field dressing.  Since I'm not into the trophy thing, I don't worry about its caping ability & stuff like that.  Just get it done & go to camp.

I do use a  Wyoming knife, but they don't stay sharp long. 3 elk at the most. My other knife is made  by Jr. Smith out of Kansas. For $65 this is about the best knife you can buy even for twice that money. It's got a 5 inch blade and a handle big enough to get a good grip on. I have oneof those Schrades, but it deosn't seem to hold an edge long. I also carry Buck skinner in my saddle bags , along witha K-Bar and small hand axe for the big heavy jobs.

We have been using the no gutting required method with elk for a few years now and you don't have to get in there and cut a lot. Just skin, cut along backbone, around hip joint socket, fillet off the ribs, Turn them over and take the tenderloins out from above and you are done. With this method, you don't cut the spine or any bones. It's best if your worried about CWD

Saddlesore,

Where is Jr. Smith located at in KS.

I haven't ever heard of them, but I'm quite particular about the blades I use, my case XXX's are 5" blades... and 5" blades aren't easy to find.

Thanks,

Spot

He's at

E.J Smith

Rt 2 Box 285

Independance, Kansas, 67301

620-331-5211. Give him a call and telll him what you want.

He's just an old cattle farmer, and does it on the side. No advertising or anything. I found out about him, when a friend was over that way taking care of his father's estate, He brought me back one as a Christmas present and I promplty lost it that seasonn, so I ordered another one.

Every one is a little different, and he will grind  the blade for right or left hand users. I skinned & gutted three elk in one day with my first one. The replacement I ordered has a little longer blade. He reccomends sharpening them on a flat surfave with white  oxide paper only.

I have told several people about him and have always said I would buy the knife from them if they were not satisfied. I have never had to buy a knife.I have seen a lot of high priced knives, and these live up to them in terms of use and keeping an edge. The $65 includes shipping.

Saddlesore,

I gave him a call, good man.

They renumber'd the streets though... Now his address is:

Ernest J. Smith

4250 CR 4315

Independance, KS 6730

Hey, ya din't tell me they was Antler handled knives made of hardend tungston steel with a brass cap.  I might just drive up there and pick one out, he said he's got 3 on hand, and won't be makin' any for a while since it's hay'n season.

I tried a client's gut hook once on a muley.  I found it of zero value to me.

I like a regular old knife. No gut hooks, no serrated edges. I'm picky that way.

I've tried gut hooks and they seem to clog up with hair too fast to be of use. I have an idea of how one would work better but haven't seen anyone use it yet. They also get in the way if you're doing any cutting inside the animal.

No reason for contraptions.  A simple drop point blade that stays sharp.  Always start at the sternum and unzip the pouch towards the anus, two fingers keeping the blade off the guts.  Easy as can be.  A thin, long blade butt hole knife to free up the anus, and you can drop all the nasty stuff in one quick dump.  Whack the goozle pipe and yank the lungs, heart and liver out and there you go, ready to quarter.  The key thing is a knife that holds an edge.  A2 tool steel is about my favorite steel.  D2 is harder, but take forever to sharpen.  A good A2 blade will go through 2 or 3 elk, including caping the head, before needing sharpening.

I remember this post from 7 years ago. Two months after I joined this board. I've done a fair bit of knife sharpening since then...
