Duck Delicacy

  • 2 ducks
  • carrots, celery and onion
  • 1 bay leaf

Stuff ducks, salt and pepper to taste.

Put into crock pot, fill crock pot half full with water. Put lid on and cook on low for eight to ten hours.

When ducks are done, cool slightly and pick meat from bones. Strain liquid and save broth. Throw away carrots, celery, onion, bay leaf and carcass. Using wild rice or rice mixes, follow instruction on box, using broth instead of water. Rice-A Roni and beef flavored rice mixes are also good as well as stove-top-stuffing, or your own stuffing recipe. If using rice, separate meat strands and mix into rice mixture. If using stuffing, grease 9xl3 pan, lay meat on bottom of pan, put stuffing on top of meat and bake for one hour at 350 degrees.

Serve with homemade rye dinner rolls fresh from the oven, with butter
