Every year I seem to get more ground game...I like chile, meat loaf, and oriental foods.

But I also like a good burger.  Most recipes seem to use 50% or more pork/sausage.  I sort of like my game as it comes.

What is your best wild game burger recipe?????

Reason for the pork is the fat. If you are going to go that route I recommend using a ground pork belly, preferably smoked and cured. Venison is lean and falls apart easily so the fat helps to stabilize it.

I actually thought this was my other favorite thread idea which is a proper favorite burger for watching a game.
1- toasted wheat Kaiser roll
2- 1/2 lb burgers
bottom burger gets crumbled blue cheese, 4 strips of bacon and 2 slices of hard swiss
Top burger gets a dash of BBQ sauce, deep fried onion slice and two slices of cheddar.(4 more strips of bacon optional)
Serve with your favorite toppings
Also good with pepper jack in place of the cheddar.

Yes, I can wipe out a 3 lb meatloaf in one sitting. What can I say, I like to eat!
...oh yeah! thats gonna hurt!

I don't contaminate any of my game meat with pork or any other meat.

I haven't had much problems with game meat falling apart.

I grill hamburgers on tin foil. any juice stays with the burger. I over season the meat. I use any hamburger seasoning from the grocery store. Don't mix it into the meat. Put it on the outside. The last few minutes put a piece of cheddar or pepperjack cheese on them just until it melts.

They are also good smoked.

I'm one of the guilty ones, I mix 1/3 pork with game or beef and season it with alpine touch. I do have to say, I seldom eat burgers, I much prefer making sausage, with my trim. I cut steaks and trim for sausage. If I want tacos or stir fry, I'll just slice steak for it.

Lately I've been making sausage patties, for the grill while camping. I just make brat seasoned pork blend and freeze in 1/2lb patties, in sandwich bag. Throw it on grill, frozen and you have juicy burger with some flavor.
