I've got a friend who's brother makes great fried squirrel. He boils them first. Anyone done this? If so, how long do you boil? Do you boil whole or in parts? Do you completely cover them in water?

I cut into quarters, then "par-boil" them. This kills any bacterial, takes about 4-5 minutes after the pot comes to a boil. Then I pan fry them; sometimes in panko bread crumbs. Delicious. |

You can do this with squirrel, rabbit, grouse, pigeon and just about anything else, if you use a flavored stock, you get more flavor and just simmer until tender, you don't want to boil it hard, unless you want to lose the flavor. You can also just coat it in flour, brown it and cover it in stock and add dumplings, squirrel & dumplings is even better than rabbit & dumplings. |

After par-boiling I sometimes just take the simple way out. Put the parts in a crock pot and cover with Cambell's condensed soups, cream of celery, or mushroom taste great. Squirrel is dry so the moisture helps. Could also add veggies to the soup mix and make a hunters stew. |

All rodents taste the same (kinda like chicken). I served squirrel to a guy from Nigeria once. He told me it was exactly like rat, which he ate a lot as a child. Seems rat is commonly eaten there because there is a lack of other proteins. As the mountain men used to say, "meat is meat." Although, as rodents go, squirrels are the cleanest. Since they live in trees, not in the ground, they come in contact with much less parasites and filth. Their diet also gives them immunity to some deseases that beset other rodents.
