5 lbs coarse ground pork shoulder some fat removed;1 TBS Salt,1.5 TBS crushed fennel seed;For HOT 2 TBS crushed dried hot pepper flakes or less;For Medium 1 TBS Hot Pepper Flakes more or less & 1 TBS Black Pepper;Mild 2 TBS Black Pepper Mix ingredients together and either stuff in casings or make into patties and freeze.This is our Italian Family Recipe that goes back several hundreds of years.We use hot or medium hot on pizza,in sauces,lasagne , fried with eggs for breakfast,fried bell peppers and fried sausage sandwiches on a kaiser roll or bun.Use ground game meat with pork added.
I make my own meatballs and sauce from scratch.
